Wedding Menus

Prices for meals are included in your package rate, refer to the Package Inclusions & Costs section for an approximate quote. Menus are sample menus only, other dishes can be suggested or prepared as per your needs.

Menu 1
Set Menu – Table Service
You may select two/three meals from each course
 All meals are served on an alternate basis

Entrées

  • Butternut pumpkin and bacon soup
  • Fresh tomato and basil soup
  • Seafood chowder
  • ½ dozen local oysters, served either natural with oyster soy dipping sauce, mornay or Kilpatrick
  • Warm Thai beef salad with lemon grass dressing and crushed nuts
  •  Smoked Salmon with rocket & soused leeks with sweet corn fritter
  • Chilli salt squid on a sweet pepper and coriander salad
  • Vegetarian antipasto plate
  • Smoked salmon fuillette with herb aioli
  • Caesar salad – Classic salad of cos lettuce, crisp proscuitto, garlic croutons and shaved parmesan

Mains

  • BBQ sword fish on eggplant puree with harissa and coriander oil
  • Pork medallions on a apple and parsnip puree with calvados sauce
  • Beef sirloin on garlic mash with a rich horseradish jus
  • Moroccan chicken on buttered couscous with preserved lemons
  • Basil and Macadamia crusted Flathead fillet with dill hollandaise
  • Cajun marinated chicken breast with a mango and coriander salsa
  • Rack of Lamb on kumara puree with a fresh herb jus
  • Atlantic salmon on spinach risotto with aioli and olive tapenade

Dessert

  • Rich chocolate terrine with berry coulee
  • Vanilla bean crème caramel with a red wine poached pear & biscotti
  • Individual strawberry and passionfruit pavlova
  • Baked cheesecake with mixed berry compote
  • Citrus tart with raspberry coulee, crème anglaise and double cream
  • Chocolate pecan brownies with rich chocolate sauce and crème anglaise
  • Tiramisu -An Italian dessert of espresso soaked sponge with mascarpone
  • Sticky date pudding on abutter scotch sauce with double cream

Buffet Style
You may choose to have this with or without the seafood included.

  • Roast beaf with horseradish
  • Honey glazed smoked leg ham
  • Oven roasted chicken breast
  • Roast potato and pumpkin
  • Steamed seasonal vegetables
  • Condiments & sauces

Seafood

  • A fresh seafood platter consisting of Port Stephens oysters, prawns,  blue swimmer crabs, mussels & Tasmanian smoked salmon , will be served to each table.

Salads - Choose 4 salads from:

  • Gourmet garden salad

  • Creamy potato & bacon salad
  • Homemade coleslaw

Desserts
